Personal Recipe Today
My husband’s uncle Marion once said, “Never trust a skinny chef, that means they don’t eat their own food.” Very “Godfather” like, from a big man who is a great cook! I think about that whenever I’m at a restaurant, I see if there’s a chance to take a look at the chef and then compare it to the food I’m eating. At home, my husband and I definitely don’t feel skinny so we know we’re doing all right. Last night we cooked a light meal of BBQ chicken on the grill and vegetable ratatouille. I know-ratatouille! Have I been watching the movie too much? No-haven’t seen it-yet. But the Mr. wanted ratatouille. I swear I really didn’t know what that meant or what it was until he made his own version of it.
Ratatouille definition: a vegetable stew made of eggplant, zuccini, peppers , onion, garlic, seasoning and herbs. The Mr.’s version:
He boils potatoes al dente, cuts them up in quarter sizes and fries it with a fresh sprig of rosemary from our garden (remember to fold over ,squeeze and twist to release the oils) and a little thyme with olive oil. Meanwhile red, yellow and orange peppers a sliced, eggplant is slieced and diced, a medium sized onion is chopped , broccoli ready to go, and 1 good sized clove is mashed a little for its aroma and flavor. All these lovely ingredients go into the pan of potatoes to be “mixed and married” together. After fifteen minutes, your ready to eat with a good glass of wine. Where did potatoes come into play? I happen to need some starch with my food. I’m a rice gal at heart. So potatoes was the copromise. Did we have any dessert? Unfortunately no, we are on European time eating after 9pm due to a hectic work schedule and had to walk our puppy before hitting the pillow getting ready to experience another day of trying something new!
